Yesterday after another day of mostly lemon juice/cayenne pepper fasting I ended up making a Kale salad. It was AMAZING! Here is the basic recipe:
1 Bunch of Kale
1 tsp Himalayan Salt
1 Tomato
1 Cucumber
2 tbsp Chia seeds
Take the leaves of the Kale off of the stalk and cut into smaller, bit size pieces. Cut up the tomato and cucumber and add it to the bowl with the kale. Add the salt and chia seeds and massage the mixture for a few minutes. This allows the ingredients to marinate together as well as the kale to loosen up.
For the dressing I used the following:
1 Avocado
2 Lemons
2 Cloves Garlic
2 scallions
Add the juice from the lemons to a food processor with the garlic and scallion. Process until the garlic and scallions are in fine pieces. Add the avocado and mix until creamy.
I just added the dressing, which I admit seemed more like a creamy dip, over the salad and mixed together. Overall I call it a major success.
I also spent a good part of yesterday researching various places to get education on healing with nutrition. I think I have narrowed down my searches quite a bit, but also don't want to make any rush decisions. My plan is to return to the learning environment this fall.
In a very positive light I consider myself in a state that is always learning and always has something to learn. If closed off to the idea of new thoughts and new insights then I bar myself from reaching my greatest potential. We can never know everything. To be the greatest we can be we must allow ourselves to change and adapt. It is the wonderful way that life works.
